Enchiladas with Mince Vegetarian Style

    Enchiladas with Mince Vegetarian Style 

    Serves: 6 

    Preparation Time: 4-5 hours 

    Ingredients 


    - Onion, 1 ½ , chopped 

    - Cream of Mushroom soup, 200 g 

    - Olive oil, 1 tablespoon 

    - Enchilada sauce, 300 g 

    - Garlic, 3 cloves, mince 

    - Tortillas, 1 dozen 

    - Veggie minces, 450 g, cooked 

    - Green Chilies, 120 g, chopped 

    - Vegan Cheddar Cheese, 300 g 

    Directions 


    1- Use a skillet to heat oil then cook garlic and onion. Cook for 2 minutes then add soup, veggie mince and chilies. Cook for 5 minutes. 

    2- Oil the bottom of your crock pot and spread 1/3 of enchilada sauce evenly in it. 

    3- Put veggie mince and cheese into each tortilla, roll and place them into crock pot seam side down. 

    4- Pour on remaining sauce and top with cheese. 

    5- Set your crock pot on high and cook enchiladas for 4 hours. Top with leftover cheese and cook for 15 minutes.
