    Enchiladas with Lentils

     Serves: 12

     Preparation Time: 4 hours

    Ingredients Sauce:


    - Flour, 2 tablespoons 

    - Vegetable broth, 500 ml 

    - Chili powder, 30 g 

    - Olive Oil, 2 tablespoons 

    - Cumin, 1/4 teaspoon

    - garlic poweder, 1/2 teaspoon

    - parsley, 1/8 teaspoon

    - basil, 1/8 teaspoon


    Enchiladas : 


    tortillas , 1 dozen

    onion, 75 g , diced

    lentils , cooked, 200 g , rinsed

    lime juice

    cilantro, 15 g

    olive oil, 1 tablespoon

    vegan cheddar , 100 g, shred ded

    Directions : 


    1- in a pan over a medium flame heat oil. then add flour, mix until silky then put in stock and seasoning and cook for 5 minutes .

    2- prepare enchiladas by heating oil in a large skillet and saute onions with pepper and salt
    put in beans along with lime juice and cilantro; cook for 2 minutes and remove from flame ..

    3- put tortillas under a damp towel and microwave for a minute till they are soft .

    4- use 2 tablespoons filling to fill each tortilla and top with cheese. roll and lay seam down in crock pot .

    5- top with sauce and set crock pot to low . cook for 3 hours. sprinkle with cheese, cook for 15 minutes and server with cilantro
