Green Chicken Enchilada

    Green Chicken Enchilada

    Serves: 6 

    Preparation Time: 90 minutes 

    - Ingredients

    - Chicken breasts, 500 g 

    - Canned enchilada sauce, 450 g, green 

    - Tortillas, 1 dozen, corn 

    - Vegan Mozzarella cheese, 100 g 

    - Green Chilies, 1 teaspoon 

    - Garlic, 2 cloves, diced 

    - Onion, 1, chopped 

    - Scallion, 1 tablespoon, chopped 

    - Jalape?o, 1/2 teaspoon 

    Directions 

    1- Boil chicken for 25 minutes, drain and allow it to cool. Shred chicken. 

    2- Using a skillet heat up oil and cook garlic, onion and jalapeno then add in chicken and cook for 5 minutes. 

    3- Spread 1/4 of sauce into crock pot and start filling each tortilla with chicken mixture and cheese. 

    4- Roll tortillas and lay seams down in crock pot. Pour remaining sauce on top and set crock pot on low and cook for 2 hours. 

    5- Sprinkle with remaining cheese and cook till cheese melts.
