Halibut Enchiladas

Ingredients
- Halibut filet, 500 g
- Vegan Cream cheese, 30 g
- Garlic Powder Vegan Cheddar Cheese, 100 g
- Salt
- Pepper
- Enchilada Sauce, 250 g
- 2 Scallions, chopped
- Tortillas, 8, with 2 tbsp. of flour
- Bell pepper-green, 1 diced
- Vegan mozzarella cheese, 100 g
- Cilantro, 20 g, chopped
- 2 Avocadoes, sliced
- Vegan sour cream, 110 g
Directions
1- Use salt, garlic powder and garlic powder to season halibut; microwave for 2 minutes.
2- Combine cream cheese, cilantro, onion, sour cream, scallion, bell pepper and cheddar cheese together.
3- Put halibut into mixture and mix. Spread ½ of sauce in crock pot and prepare to fill and roll tortillas.
4- Take halibut mixture and place in center of tortilla, roll and lay seam side flat in pot. Repeat with the rest of tortillas
5- Pour remaining sauce on top of tortillas.
6- Set crock pot on low and cook for 3 hours.
7- Sprinkle with remaining cheese and cook till cheese melts.
8- Serve with sliced avocado.
