Turkey Enchiladas - tab5at

    Turkey Enchiladas 

    Serves: 4 

    Preparation Time: 3 hours 

    Ingredients 

    - Vegetable Oil, 1 tablespoon 

    - Vegan Sour Cream, 230 g 

    - Garlic, 1 clove, minced 

    - Vegan Cheddar cheese, 50 g, shredded 

    - Onion, 1, chopped Turkey, 250 g, cooked and cubed 

    - Jalapeno, 1, chopped 

    - Tortillas- corn, 4 

    - Flour, 1 tablespoon 

    - Black Olives, 1 tablespoon, chopped 

    - Chicken broth, 250 ml 

    - Canned tomatoes, 300 g, diced and drained 

    Directions


    1- Heat up oil in pan or spray with cooking spray and sauté onion and garlic then add flour and jalape?o. 

    2- Mix to combine and add broth and whisk. Cook for 5 minutes then put in tomatoes; cook for 5 minutes more. 

    3- Mix cheddar, turkey and sour cream together in a bowl. 

    4- Take turkey mix and place in center of tortilla, roll and lay seam side flat in pot. Repeat with the rest of tortillas 

    5- Pour sauce along with olives on top of tortillas 

    6- Set crock pot on low and cook for 2 ½ hours. 

    7- Sprinkle with remaining cheese and cook till cheese melts.
