Kingfish Enchiladas

Ingredients
- King Mackerel Filets, 250 g, cleaned and cubed
- Bell Pepper- green, 1/2, diced
- Salad dressing- Italian, 60 g
- Salsa, 260 g
- Flour, 2 tablespoons
- Tortillas, 4
- Olive Oil, 1 tablespoon
- Vegan Cheddar Cheese, 200 g
- Onion, 1/2, diced
Directions
1- Mix fish with salad dressing and put side to marinate for 30 minutes. Then add flour to marinated fish and combine.
2- Heat up oil in pan or spray with cooking spray and sauté onion and green peppers then add floured fish and cook for 5 minutes.
3- Stir mixture and add ½ of salsa to fish and remove from heat.
4- Take fish mixture and place in center of tortilla, roll and lay seam side flat in pot. Repeat with the rest of tortillas
5- Pour leftover salsa on top of tortillas
6- Set crock pot on low and cook for 2 hours.
7- Sprinkle with remaining cheese and cook till cheese melts.
