    Honey Enchiladas 

    Serves: 5 

    Preparation Time: 3 hours 

    Ingredients 


    - Honey, 2 tablespoons 

    - Enchilada sauce- green, 200 g 

    - Chili Powder, 1 ½ teaspoons 

    - Honey, 2 teaspoons 

    - Plain Vegan Cheese, 300 g 

    - Jalapeno, 2 teaspoons 

    - Lime juice, 2 tablespoons 

    - Tortillas, 5 

    - Garlic, 1 clove, diced 

    - Lime Juice, 2 teaspoons 

    - Coconut cream, 150 g 

    - Chicken breasts, 250 g, cooked and shredded 

    Directions 


    1- Whip lime juice, honey, chili powder and garlic together in a big bowl. Then put in chicken and toss. 

    2- Put aside to marinate for 30 minutes and then drain excess marinade into a bowl and add 2 cups cheese to chicken. Combine mixture. 

    3- Spread ¼ of sauce in crock pot and fill each tortilla with chicken mixture; lay tortillas with seam down in pot. 

    4- Whisk coconut cream, remaining sauce and left over marinade together and pour on top of enchiladas. 

    5- Set crock pot on low and cook for 2 ½ hours. 

    6- Sprinkle with remaining cheese and cook till cheese melts.
