    Tofu Enchiladas Serves: 12

    Preparation Time: 4 hours .

    Ingredients :

    1- Coconut cream, 300 g

    2- Tofu, 250 g,

    3- silken Tortillas, 1 dozen

    4- Canned Corn, 90 g

    5- Salsa, 400 g

    6- Mixed Dried Seasoning, 2 tablespoons

    7- Enchilada Sauce, 450 g

    8- Scallions, 2 stalks, chopped

    9- Salt

    Pepper

    Directions

    1- Using a food processor, blend tofu, garlic, onion, scallions, seasoning and half of coconut cream together.

    2- Put tofu mixture aside to marinate for 30 minutes.

    3- Spread enchilada sauce into the bottom of crock pot.

    4- Take tofu blend, mix in corn and fill enchilada, top with salsa and cheese. Roll and place into Crockpot with seam flat down. Top with remaining sauce and cheese.

    5- Set crock pot on high and cook for 3 ½ hours.
