Enchiladas with Tuna - tab5at

    Enchiladas with Tuna 

    Serves: 12 

    Preparation Time: 2 hours 

    Ingredients 

    1- Tuna, 230 g 

    2- Mustard, 1 teaspoon 

    3- Garlic powder, 1/2 teaspoon 

    4- Tortillas, 1 dozen 

    5- Canned Corn, 90 g 

    6- Onion, 1, diced 

    7- Chili powder, 1 tablespoon 

    8- Enchilada Sauce, 400 g 

    9-  Scallions, 2 stalks, chopped 

    10- Cilantro, 1 teaspoon 

    11- Vegan cream cheese, 100 g 

    12- Vegan Mozzarella cheese, 200 g 

    13- Salt 

    14- Pepper 

    Directions 

    1- Combine tuna, mustard, garlic powder, corn, onion, cottage cheese, chili powder, scallions, cilantro and salt and pepper. 

    2- Combine tuna mixture and put aside for 10 minutes. 

    3- Spread enchilada sauce into the bottom of crock pot. 

    4- Take tuna mix and fill enchilada. Roll and place into Crockpot with seam flat down. Top with enchilada sauce and cheese. 

    5- Set crock pot on low and cook for 1 ½ hours.
